Allergy Free & Healthy Apple Crumble

  • 4-6 green apples peeled and chopped into wedges
  • 2 cups Gluten Free oats or quinoa flakes
  • 1 cup shredded coconut
  • 1/2 cup almond meal
  • 2 tbsp cinnamon
  • 1 tbsp nutmeg
  • 2 tbsp coconut sugar
  • 3 tbsp rice malt syrup
  • 2 tbsp almond butter
  • 1 cup coconut oil
  1.  Boil apple slices in water for 3-5 mins (until just softened)
  2.  Drain and place in oven-safe dish
  3. Sprinkle with 1 tsp cinnamon and drizzle 1 tbsp of rice malt syrup on top
  4. Combine oats/quinoa flakes, coconut, almond meal, cinnamon, nutmeg and coconut sugar in a bowl.
  5. Melt coconut oil, 2 tbsp rice malt syrup and almond butter in a saucepan until runny sauce forms
  6. Combine sauce with dry ingredients to create a crumble
  7. Place evenly in an oven-safe dish, sprinkle cinnamon over apples.
  8. Bake at 180 degrees for 15-20 mins until crumble becomes golden
  9. Remove from heat and allow to cool for 5 mins before serving with coconut yogurt or thickened coconut cream

I sometimes like to add in some berries (either frozen or fresh) to mix it up a little.
